July 3, 2014 – On Lowcountry Live, holistic chef and founder of graw foods Ken Immer joined me to make a patriotic, vegan fruit tart for the 4th of July! Why would we want to enjoy vegan food on the 4th? Find out!
Here’s that sumptuous Vegan Fruit Tart Recipe:
Coconut Cashew Cream
- 2 Cups Cashew pieces
- 1 Cup Coconut milk
- ¼ Cup Coconut oil (melted)
- 2 Tablespoons Coconut nectar
- 1/2 t Vanilla extract
Soak cashews in water for 30 minutes to soften. Combine all ingredients in a food processor or blender and blend well until creamy. Spread in a prebaked tart shell. Top with sliced strawberries (red), bananas (white), and blueberries (blue) for a patriotic treat!
Tart Shells
- 1 Cup graw crumbs (you can buy them here)
- 1/4 Cup Water
- 1 Tablespoon Coconut nectar or agave
