Feliz Lunes sin Carne! (Happy Meatless Monday!)

It’s time for tasty meat-free meals that are healthy, delicious, and make you feel great about yourself, and how you’re choosing to treat animals and our Earth!

Meatless Monday deserves to be celebrated, so why not have a Mexican fiesta with all the fixin’s? Mexican and Latin American cuisine bursts with bold flavors, is easy to ‘veganize,’ plus it’s filling and nutritious too.

Below are some Mexican and Latin American meals I’ve eaten at restaurants and prepared at home … maybe one of them will sound good to you for dinner tonight!

The Vegan Plate at Cucina de Luz in Telluride, CO. It was full of amazing, garlicky roasted vegetables, creamy refried beans, a salad with the most mouth-watering cilantro dressing, and seasoned rice. They had a delish margarita too, made with agave nectar!

Taco Night at our place! Here’s our easy taco with Boca Burger meatless crumbles, tomatoes, lettuce, and salsa. Delicioso!

For this, just take your Boca Burger crumbles (which can be found in the frozen section of almost all grocery stores), saute them with water and taco seasoning, add your favorite toppings, and you’ve got dinner!

Cuban black beans and brown rice with red bell pepper, onion, lime juice, cilantro and spices. Very tasty! Add some Cholula hot sauce for a kick of spice.

The Tico Burrito from the Laughing Seed in Asheville. This was a whole-wheat tortilla filled with spiced tico tofu, molé sauce and brown rice, topped with avocado, red salsa, and a vegan cream sauce.

“No Queso Quesadillas” from the cookbook The Vegan Table by Colleen Patrick-Goudreau. These are red pepper tortillas filled with hummus, salsa, and chives, topped with vegan sour cream and lettuce. They’re a flavorful and fun appetizer or light lunch.

The beans and rice bowl (with no cheese) from Dellz Deli on the corner of King and Cannon in Charleston. The vegan goddess dressing makes this dish divine, and everything on the menu at Dellz is delectable. Their door even says “Vegans and Vegetarians Welcome!” Now that’s what I’m talking ’bout!

Here’s the huge salad from Taco Boy in downtown Charleston. It features fire roasted bell peppers, roasted corn salsa cruda, avocado, crispy tortilla strips and lime cilantro vinaigrette. Sometimes I get a side of black beans and pour those over it too. Delicious!

Taco Boy also has a Folly Beach location with a laid-back, beachy vibe.

This was a vegan burrito I got at a Mexican restaurant in Baltimore’s airport of all places. It was full of sauteed veggies, beans, and rice, and served with a side of creamy guacamole. All I had to ask for was no cheese, and voila! Vegan!

Ultimate vegan nachos. We usually include lettuce too but we were out. This has seasoned black beans, vegan nacho cheese sauce, salsa, Cholula hot sauce, avocado and vegan sour cream.

This is just a small sampling of all the fabulous Mexican and Latin American options that are out there. I realized as I was writing this post that I haven’t even taken a picture of my favorite, the sweet potato and black bean enchiladas I love so much! Next time.

So, put on that mariachi music, cha cha yourself into your kitchen and get cooking! (Or head to your favorite local Mexican place and just order your meal ‘sin carne!’)
