I am not a morning person, so if it were up to me, I’d sleep ’til noon and eat lunch for breakfast.

Alas, I can’t sleep ’til noon everyday, so breakfast becomes quite necessary. I make the most of it by eating scrumptious vegan breakfasts that give me the energy I need.

This is the green smoothie (before it’s blended) that I drink every morning with breakfast. I got inspired to start drinking green smoothies by Kris Carr, who wrote the book Crazy Sexy Diet (http://crazysexylife.com/2011/love-list-15-crazy-sexy-diet-tips/). The ingredients vary from week to week, but usually it includes:
pineapple
pear
orange
frozen banana
kale
spinach
berries
cucumber
avocado
chia seeds (high in fiber and omega 3s) or hemp seeds
ice

And here is the green smoothie all blended up! It tastes like fruit and is a super nutritious and energy-boosting way to start the day!

This is a breakfast I eat pretty often. It’s a green smoothie and a toasted English muffin topped with Earth Balance buttery spread and nutritional yeast. Nutritional yeast is the worst-named, best-tasting stuff – it’s nutty and cheesy and is amazing sprinkled on popcorn, pasta, and basically anything savory. It’s also the base of my vegan cheese sauce. I heart nutritional yeast.

These are breakfast potatoes and a tofu scramble from my “Vegan with a Vengeance” cookbook. Mushrooms, onion, spinach and spices give this dish its perfectly satisfying savory taste. Delish!

This is the banana bread French toast from Puree (thinkpuree.com) that I indulged in recently. Ooh la la, it was fab!
